Guy’s Best Tomato Sauce
Ingredients:
3 cans San Marzano peeled tomatoes (28 oz)
3 cans Cento Italian tomato puree (28 oz)
1 bunch scallions (chopped)
2 large garlic cloves (riced)
3 Tablespoons Parsley
2 Tablespoons Oregano
2 Tablespoon Basil
1 teaspoon white pepper
1 teaspoon baking soda (add additional ½ -1 tea if needed)
2 pounds seasoned ground beef (sautéed with salt, pepper, garlic powder, and onion powder)
1/3 cup Extra Virgin Olive Oil
Directions:
Prepare peeled tomatoes: Remove tomatoes from can and save water.
Cut tops off (1 inch). Remove as many seeds as possible. Cut or pull into small pieces.
In a 6-quart pot, add oil and sauté garlic and scallions until the onions are translucent
Add water from tomatoes, add tomatoes, add puree. Stir
Simmer for 30 minutes, stirring every 5-10 minutes
Add spices (parsley, oregano, basil, white pepper.
Simmer for additional 30 minutes, stirring every 5-10 minutes
Add baking soda. Sauce should have only a light taste of tomato. If necessary, add additional baking soda.
Add cooked ground beef
Simmer for an additional 30-60 minutes until desired consistency
